Ingredients

  • 900 g Potatoes
  • 6 stalks Scallions (green onions)
  • 250 ml Milk
  • 75 g Butter
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks.

Step 2

Place the potatoes in a large pot and cover with cold water. Add 1/2 teaspoon of salt.

Step 3

Bring the water to a boil, then reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork.

While the potatoes are cooking, finely chop the scallions.

In a small saucepan, heat the milk over low heat. Add 50 g of butter and the chopped scallions to the milk. Stir occasionally until the butter melts and the mixture is warm (but do not let it boil).

Once the potatoes are done, drain them thoroughly and return them to the pot. Allow them to sit for 1-2 minutes to release excess steam.
