Ingredients

  • 4 tablespoons (or 4 tea bags) Dried chamomile flowers or chamomile tea bags
  • 4 cups Water
  • 2 tablespoons Honey (optional, for sweetness)
  • 1 whole Lemon
  • 2 cups Ice water
  • 4 leaves Fresh mint leaves (optional, for garnish)

Directions

Step 1

Boil 4 cups of water in a medium saucepan.

Step 2

Add the dried chamomile flowers or chamomile tea bags to the hot water and let steep for 5-7 minutes. If using dried flowers, strain the mixture through a fine-mesh sieve to remove the solids. If using tea bags, simply remove them.

Step 3

While the tea is still warm, stir in the honey (if using) until it dissolves completely. Adjust the sweetness to your preference.

Step 4

Let the chamomile tea cool to room temperature, then pour the tea into a shallow, freezer-safe container.

Step 5

Place the container in the freezer and allow it to freeze for 30 minutes. After 30 minutes, use a fork to scrape or break up any ice crystals forming along the edges. Return it to the freezer.

Step 6

Repeat this scraping process every 30 minutes for about 3-4 hours, or until the entire mixture forms fine, flaky ice crystals resembling granita.

Step 7

When the granita is ready, prepare 2 cups of ice water in a large serving jug or individual glasses. Juice the lemon and divide the lemon juice equally between the servings.

Step 8

Spoon the chamomile granita into the ice water, stirring gently to combine. Garnish with fresh mint leaves if desired.

Step 9

Serve immediately and enjoy the refreshing Chamomile Granita Ice Water!
