Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cardamom
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground cloves
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter, chilled and cubed
  • 0.75 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Black tea (loose leaf or 1 teabag)

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, ground cardamom, ground ginger, ground cloves, and salt. Whisk well to distribute the spices evenly.

Add the chilled, cubed butter to the dry mixture and cut it in using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

In a small saucepan, heat the milk over medium heat until it just begins to simmer.

Remove from the heat and steep the black tea in the warm milk for 5 minutes. If using a tea bag, remove and discard the bag after steeping. If using loose leaf tea, strain the milk to remove the tea leaves.

Let the tea-infused milk cool slightly, then stir in the vanilla extract.

Gradually pour the milk mixture into the dry ingredients, stirring gently with a fork until the dough comes together. Be careful not to overmix.

Turn the dough out onto a lightly floured surface and gently knead it 2-3 times to bring it together. Pat it out into a 1/2-inch thick rectangle.

Using a 1.5-inch biscuit cutter, cut out mini biscuits and place them on the prepared baking sheet, leaving about 1 inch of space between each.

Re-roll the scraps and cut out more biscuits until all the dough is used.

Bake in the preheated oven for 10-12 minutes, or until the tops are lightly golden.
