Ingredients

  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 3 pieces Chai tea bags
  • 1 piece Cinnamon stick
  • 4 pieces Whole cloves
  • 0.5 teaspoons Ground nutmeg
  • 4 large Egg yolks
  • 0.5 cups Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 cups Dark rum or bourbon (optional)
  • 0 optional Whipped cream (for topping)
  • 0 optional Ground cinnamon (for garnish)

Directions

Step 1

In a medium saucepan, combine the whole milk, heavy cream, chai tea bags, cinnamon stick, and whole cloves.

Step 2

Heat the mixture over medium heat until it begins to steam, but do not let it boil. Reduce the heat to low and let it steep for 10 minutes.

Step 3

Remove the chai tea bags, cinnamon stick, and cloves from the saucepan and discard. Keep the spiced milk mixture on low heat.

Step 4

In a medium bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and slightly thickened, about 2-3 minutes.

Step 5

Slowly ladle about 1/2 cup of the warm spiced milk into the egg yolk mixture, whisking constantly, to temper the eggs.

Step 6

Gradually pour the tempered egg mixture back into the saucepan with the remaining spiced milk, whisking constantly.

Step 7

Cook the mixture over low heat, stirring constantly with a wooden spoon or silicone spatula, until it thickens slightly and coats the back of the spoon. This should take about 5-7 minutes. Do not let the mixture boil to avoid curdling.

Step 8

Once thickened, remove the saucepan from the heat and stir in the vanilla extract and optional dark rum or bourbon if desired.

Step 9

Pour the chai eggnog into a pitcher or serving glasses and chill in the refrigerator for at least 1 hour, or serve warm if preferred.

Step 10

Before serving, top with whipped cream and a light dusting of ground cinnamon for garnish, if desired. Enjoy!
