Ingredients

  • 2 lbs Chicken wings
  • 2 tbsp Black tea (loose-leaf or tea bags)
  • 1 cup Water
  • 0.25 cup Brown sugar
  • 0.5 cup Ketchup
  • 2 tbsp Soy sauce
  • 2 tbsp Honey
  • 2 cloves Garlic, minced
  • 0.5 tsp Ground ginger
  • 0.5 tsp Ground cinnamon
  • 0.25 tsp Ground cardamom
  • 0.125 tsp Ground cloves
  • 0.25 tsp Ground black pepper
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 2 tbsp Chopped cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top. Lightly grease the rack with oil to prevent sticking.

Step 2

In a small saucepan, bring the water to a simmer. Add the black tea and steep for 5 minutes. Strain the tea (if using loose-leaf) or remove the tea bags, and set the tea concentrate aside.

Step 3

In a medium mixing bowl, combine the brown sugar, ketchup, soy sauce, honey, minced garlic, ground ginger, ground cinnamon, ground cardamom, ground cloves, and ground black pepper. Add the strained tea concentrate and mix until smooth to create the chai BBQ glaze.

Step 4

Pat the chicken wings dry with paper towels and place them in a large mixing bowl. Drizzle the wings with vegetable oil, sprinkle with salt, and toss to coat evenly.

Arrange the wings in a single layer on the prepared wire rack. Bake in the preheated oven for 20 minutes.

Step 6

Remove the wings from the oven and brush generously with the chai BBQ glaze on both sides. Return the wings to the oven and bake for another 20 minutes, flipping and basting with more glaze halfway through.

For extra caramelization, switch the oven to broil mode during the last 2-3 minutes of cooking, keeping a close eye to prevent burning.

Remove the wings from the oven and let them rest for 5 minutes. Garnish with chopped cilantro, if desired, and serve warm.
