Ingredients

  • 1 pound Ground beef (80% lean, 20% fat)
  • 1 medium Yellow onion, finely diced
  • 2 cloves Minced garlic
  • 1 packet Taco seasoning
  • 0.25 cup Water
  • 8 pieces Flour tortillas (medium size)
  • 1.5 cups Shredded cheddar cheese
  • 0.25 cup Vegetable oil
  • 1 cup Iceberg lettuce, shredded
  • 1 medium Roma tomato, diced
  • 0.5 cup Sour cream
  • 2 tablespoons Hot sauce (optional)

Directions

Step 1

Heat a large skillet over medium-high heat and add the ground beef. Cook for 2-3 minutes, breaking it up with a wooden spoon.

Step 2

Add the diced onion and cook for an additional 4-5 minutes, or until the onion softens and the beef is browned.

Step 3

Stir in the minced garlic and taco seasoning, coating the beef. Add water, reduce heat to low, and let it simmer for 3-4 minutes until the mixture thickens slightly. Remove from heat.

Step 4

Heat a clean skillet over medium heat and add 1 tablespoon of vegetable oil. Allow the oil to heat for about 1 minute.

Step 5

Place one tortilla in the skillet and sprinkle a small handful of shredded cheese over half of it. Add a generous spoonful of the cooked beef mixture on top of the cheese.

Step 6

Fold the tortilla in half to form a taco shape and press down gently with a spatula. Cook for 1-2 minutes on each side, or until the tortilla is golden brown and crispy. Repeat with the remaining tortillas, adding more oil to the skillet as needed.

Step 7

Once all tacos are cooked, fill each one with shredded lettuce, diced tomatoes, a dollop of sour cream, and a drizzle of hot sauce, if desired.

Step 8

Serve the tacos immediately while they’re hot and enjoy Chacha’s Greasy Tacos!
