In a large mixing bowl, add 250 ml of plain yogurt.
Whisk the yogurt until smooth and creamy.
Gradually add 500 ml of cold water while continuing to whisk the yogurt mixture. Ensure the yogurt and water are fully blended to form a smooth buttermilk consistency.
Add 1 teaspoon of grated ginger, 1 small finely chopped green chili, 1 teaspoon of roasted and ground cumin seeds, and 0.5 teaspoon of salt into the yogurt mixture. Stir well to combine all ingredients.
Stir in 2 tablespoons of chopped fresh coriander leaves and, if using, 10 mint leaves for an additional refreshing taste.
Taste the chaas and adjust the salt if necessary.
