Ingredients

  • 2 tablespoons Olive oil
  • 2 pieces Boneless, skinless chicken breasts
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 4-ounce can Canned green chilies, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 0.25 teaspoon Ground cayenne pepper
  • 4 cups Chicken broth
  • 2 15-ounce cans Canned white beans, drained and rinsed
  • 1.5 cups Frozen corn kernels
  • 4 ounces Cream cheese, softened
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro, chopped (optional)
  • 0.5 cup Shredded Monterey Jack cheese (optional, for serving)
  • 1 cup Tortilla chips (optional, for serving)

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken breasts with a pinch of salt and pepper, then add them to the pot. Sear for 4-5 minutes on each side until golden brown but not fully cooked. Remove and set aside.

Step 3

In the same pot, add the diced onion. Cook for 3-4 minutes until softened, then stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the canned green chilies, cumin, oregano, and cayenne pepper to the pot. Stir well to combine, and cook for 1-2 minutes.

Step 5

Pour in the chicken broth and bring to a gentle simmer.

Step 6

Cut the chicken breasts into bite-sized pieces and return them to the pot. Add the white beans and corn kernels. Simmer for 15 minutes until the chicken is fully cooked and the flavors meld together.

Step 7

Reduce the heat to low. Stir in the softened cream cheese until fully melted and the broth becomes creamy.

Step 8

Add the heavy cream, salt, and black pepper, stirring to combine. Taste and adjust seasoning if needed.

Step 9

Serve hot, garnished with chopped cilantro, shredded Monterey Jack cheese, and tortilla chips if desired.
