  • 500 g Chicken thighs, boneless and skinless
  • 2 tbsp Coconut oil
  • 1 large Onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 1 tbsp Ginger, grated
  • 10 leaves Curry leaves
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Ground cinnamon
  • 1 tsp Chili powder (adjust to taste)
  • 2 medium Tomatoes, chopped
  • 400 ml Coconut milk
  • 200 ml Water
  • 1 tsp Salt
  • 2 tbsp Fresh cilantro, chopped
  • 4 wedges Lime wedges (for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

Heat the coconut oil in a large pot or skillet over medium heat.

Step 3

Add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 4

Stir in the minced garlic, grated ginger, and curry leaves. Cook for 1-2 minutes until aromatic.

Add the ground coriander, cumin, turmeric, cinnamon, and chili powder. Stir to coat the onions with the spices and let them roast for 30 seconds.
