Ingredients

  • 1 cup Baby cereal (iron-fortified)
  • 0.5 cup Whole wheat flour
  • 1 large Ripe banana (mashed)
  • 0.25 cup Unsweetened applesauce
  • 2 tablespoons Coconut oil (melted)
  • 0.25 teaspoon Cinnamon (optional)
  • 0.5 teaspoon Vanilla extract (optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized mixing bowl, combine the baby cereal and whole wheat flour. If using, stir in the cinnamon.

Step 3

In a separate bowl, mash the ripe banana thoroughly until smooth. Add the unsweetened applesauce, melted coconut oil, and vanilla extract, if using. Mix until well combined.

Step 4

Gradually add the wet ingredients to the dry ingredients and stir until the dough comes together. The mixture should be soft but not too sticky.

Step 5

Scoop out tablespoon-sized portions of the dough and roll them into balls. Flatten each ball slightly with the palm of your hand to form small cookie shapes.
