Ingredients

  • 1 loaf (10-inch diameter) Round Sicilian bread
  • 0.5 cup Green olives, pitted
  • 0.5 cup Black olives, pitted
  • 0.75 cup Giardiniera (Italian pickled vegetables)
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 2 Garlic cloves, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Black pepper
  • 6 ounces Provolone cheese, thinly sliced
  • 6 ounces Mozzarella cheese, thinly sliced
  • 6 ounces Genoa salami, thinly sliced
  • 6 ounces Mortadella, thinly sliced
  • 6 ounces Capicola (or ham), thinly sliced

Directions

Step 1

Prepare the olive salad by finely chopping the green olives, black olives, and giardiniera.

Step 2

In a medium bowl, mix the chopped olives and giardiniera with the olive oil, red wine vinegar, minced garlic, dried oregano, and black pepper. Stir well to combine. Cover and let the mixture sit for at least 15 minutes (or ideally overnight in the refrigerator for best flavor).

Step 3

Slice the Sicilian bread horizontally in half to create a top and bottom slice. If the bread is very thick, you may want to hollow out some of the interior to make room for the fillings.

Step 4

Spread a generous layer of the prepared olive salad mixture on the cut side of both the top and bottom bread halves.

Step 5

On the bottom half of the bread, layer the provolone, mozzarella, Genoa salami, mortadella, and capicola evenly.

Step 6

Place the top half of the bread over the layered fillings, pressing down gently to compress the sandwich.

Step 7

Wrap the entire sandwich tightly in plastic wrap or parchment paper and weight it down with a heavy skillet or similar object. Let it rest for 30 minutes to 1 hour to allow the flavors to meld.

Step 8

Unwrap the sandwich, slice it into quarters, and serve at room temperature. Enjoy your authentic Central Grocery-style Muffuletta!
