Ingredients

  • 1 pound Boneless chicken breast, thinly sliced
  • 3 tablespoons Soy sauce
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 medium Onion, thinly sliced
  • 1 medium Red bell pepper, julienned
  • 1 medium Green bell pepper, julienned
  • 1 large Carrot, thinly sliced
  • 2 cups Cabbage, shredded
  • 2 medium Tomatoes, diced
  • 8 ounces Cooked spaghetti or thin rice noodles
  • 1 teaspoon Ground cumin
  • 1 teaspoon Oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cilantro, chopped (optional)

Directions

Step 1

In a mixing bowl, combine soy sauce, lime juice, and 1 tablespoon of olive oil. Add the thinly sliced chicken breast and marinate for 10 minutes.

Step 2

Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the minced garlic and sauté until fragrant, about 30 seconds.

Step 3

Add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken turns golden and is cooked through. Remove the chicken from the skillet and set aside.
