Ingredients

  • 100 g Mung bean flour
  • 10 leaves Pandan leaves
  • 400 ml Water
  • 0.5 tsp Green food coloring
  • 0.5 tsp Salt
  • 200 g Palm sugar
  • 500 ml Coconut milk
  • 200 g Ice cubes
  • 100 ml Water (for syrup)

Directions

Step 1

Prepare the pandan extract by blending pandan leaves with 400 ml of water, strain the liquid, and set aside.

Step 2

In a pot, combine mung bean flour, pandan extract,½ tsp of salt, and green food coloring. Stir well to dissolve the flour.

Step 3

Cook over medium heat, stirring continuously until the mixture thickens and forms a dough-like consistency for about 10-15 minutes.

Step 4

Prepare a large bowl with icy water. Pour the dough into a cendol or perforated mold and press it over the cold water to create noodle shapes. Let them set in the water.

Step 5

For the syrup, melt the palm sugar in a saucepan with 100 ml of water. Stir until dissolved, then strain to remove impurities.

Step 6

In another saucepan, heat the coconut milk with a pinch of salt until warm. Do not boil.

Step 7

To serve, place a generous amount of cendol noodles into a serving glass. Add palm sugar syrup and then the coconut milk.
