Ingredients

  • 6 large Egg yolks
  • 0.75 cup Granulated sugar
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 0.5 cup Irish whiskey
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground nutmeg
  • 0.5 teaspoon Cinnamon powder
  • 4 large Egg whites
  • 0.25 cup Superfine sugar

Directions

Step 1

In a medium mixing bowl, whisk the egg yolks until they lighten in color.

Step 2

Gradually add the granulated sugar while whisking, ensuring the mixture becomes smooth and creamy.

Step 3

In a saucepan over medium heat, combine the whole milk, heavy cream, vanilla extract, nutmeg, and cinnamon powder.

Step 4

Heat the mixture gently, stirring frequently, until it begins to steam but does not boil.

Step 5

Slowly temper the hot milk mixture into the egg yolk mixture by adding a small amount at a time and whisking continuously to prevent curdling.

Step 6

Return the combined mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon (approximately 170°F or 75°C).

Step 7

Remove the saucepan from heat, stir in the Irish whiskey, and transfer the mixture to a large bowl. Let it cool to room temperature, then refrigerate for at least 2 hours (or overnight).

Step 8

Just before serving, beat the egg whites in a clean mixing bowl until soft peaks form.

Step 9

Gradually add the superfine sugar to the egg whites while continuing to beat until they form stiff peaks.

Step 10

Gently fold the beaten egg whites into the chilled eggnog to create a light and airy texture.

Step 11

Serve the eggnog in glasses, garnished with an extra sprinkle of ground nutmeg on top.
