Ingredients

  • 200 grams Cellophane noodles (bean thread noodles)
  • 1 large Cucumber
  • 1 bunch Fresh cilantro
  • 3 cloves Garlic
  • 3 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground white pepper
  • 2 teaspoons Sesame seeds (optional, toasted)

Directions

Step 1

Bring a large pot of water to a boil. Place the cellophane noodles in a heatproof bowl and pour the boiling water over them. Let them soak for 5 minutes until tender, then drain and rinse with cold water. Use kitchen scissors to cut the noodles into shorter, manageable lengths. Set aside.

Step 2

While the noodles soak, prepare the cucumber. Slice it in half lengthwise, then use a spoon to scrape out the seeds. Cut the cucumber into thin matchsticks or small bite-sized pieces.
