Ingredients

  • 2 cups Rolled oats
  • 1 cup Whole wheat flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Unsweetened applesauce
  • 1 large Ripe banana
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 2 tablespoons Unsweetened almond milk
  • 0.5 cup Chopped nuts (e.g., walnuts or pecans)
  • 0.5 cup Sugar-free chocolate chips or raisins

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, ground cinnamon, and salt. Stir well to distribute the dry ingredients evenly.

Step 3

In a separate bowl, mash the ripe banana until smooth, then add the unsweetened applesauce, vanilla extract, egg, and almond milk. Whisk everything together until fully combined.

Step 4

Pour the wet mixture into the dry ingredients and stir until a dough forms. Be sure not to overmix.

Step 5

Gently fold in the chopped nuts and sugar-free chocolate chips or raisins.

Step 6

Using a spoon or a cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten the cookies slightly with the back of the spoon as they won't spread much during baking.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve and enjoy these sugar-free oatmeal cookies as a healthy snack or dessert!
