Ingredients

  • 2 tablespoons Butter
  • 2 cups Leeks (white and light green parts only, sliced thinly)
  • 2 cups Celery (chopped)
  • 2 cups Yukon Gold potatoes (peeled and diced)
  • 4 cups Vegetable or chicken stock
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.25 teaspoons White pepper
  • 2 tablespoons Fresh chives (chopped, for garnish)

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the sliced leeks and chopped celery to the pot. Sauté for 5-7 minutes until softened but not browned.

Step 3

Stir in the diced potatoes and pour in the stock. Raise the heat to bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 20 minutes, or until the potatoes are fork-tender.

Step 4

Remove the pot from heat and let the soup cool slightly for about 10 minutes.

Step 5

Using an immersion blender (or a standard blender in batches), puree the soup until smooth. Return the soup to the pot if using a standard blender.

Step 6

Stir in the heavy cream, salt, and white pepper. Taste and adjust seasoning as needed.

Step 7

Transfer the soup to a bowl or container and chill it in the refrigerator for at least 2 hours, or until cold.
