Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion
  • 2 garlic cloves
  • 6 stalks celery
  • 1 medium potato
  • 4 cups chicken or vegetable stock
  • 4 ounces Stilton cheese
  • 0.5 cup heavy cream
  • 0.5 cup chopped walnuts
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil and butter in a large pot over medium heat.

Peel and finely chop the onion and garlic. Add them to the pot and sauté for 5 minutes until softened and translucent.
