  • 8 pieces celery stalks
  • 1 piece leek
  • 1 piece yellow onion
  • 3 tablespoons butter
  • 1 piece potato
  • 4 cups vegetable stock
  • 1 cup whole milk
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 piece French baguette
  • 4 ounces Stilton cheese
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Wash the celery, leek, and potato thoroughly. Chop the celery into 1-inch pieces, finely slice the leek, dice the onion, and peel and cube the potato.

In a large pot, melt the butter over medium heat. Add the onion and leek, cooking until softened and translucent, about 5 minutes.

Add the celery and potato to the pot. Stir to coat the vegetables in butter and cook for an additional 5 minutes.
