Ingredients

  • 2 tablespoons olive oil
  • 4 celery stalks
  • 1 medium onion
  • 2 garlic cloves
  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional)

Directions

Step 1

Wash the celery stalks thoroughly and cut them into thin slices about 1/4 inch thick. Peel and finely chop the onion. Mince the garlic cloves.

Step 2

Heat the olive oil in a medium-sized pot or deep skillet over medium heat.

Step 3

Add the chopped onion to the pot and sauté for 3-4 minutes, until soft and translucent.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Step 5

Add the sliced celery to the pot and cook for 5 minutes, stirring occasionally, until it begins to soften.

Step 6

Rinse the rice under cold running water until the water runs clear. Drain well.

Step 7

Stir the rice into the pot with the celery mixture. Cook for 2 minutes, stirring constantly, to lightly toast the rice.

Step 8

Pour the broth into the pot and add the salt and black pepper. Stir well to combine, then bring the mixture to a boil.

Step 9

Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed all the liquid.

Step 10

Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the rice to steam and fluff.

Step 11

Gently fluff the rice with a fork and sprinkle with freshly chopped parsley, if using, before serving.
