Ingredients

  • 1 large celeriac (celery root)
  • 2 tablespoons olive oil
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons smoked paprika (optional)

Directions

Step 1

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

2. Peel the celeriac using a sharp knife to remove the tough outer skin.

Step 3

3. Using a mandoline slicer or a sharp knife, cut the celeriac into thin slices about 1/8 inch (3mm) thick.

Step 4

4. Place the celeriac slices in a large mixing bowl and toss with olive oil, sea salt, black pepper, and smoked paprika (if using). Ensure each slice is coated evenly.

Step 5

5. Arrange the slices in a single layer on the prepared baking sheet. Avoid overlapping to ensure even cooking.

Step 6

6. Bake in the preheated oven for 10 minutes, then flip the slices over and bake for another 10 minutes, or until golden brown and crisp around the edges.

Step 7

7. Remove from the oven and let the celeriac thins cool for a few minutes on the baking sheet.

Step 8

8. Serve immediately as a snack, appetizer, or side dish. Enjoy!
