Ingredients

  • 1 medium (about 500g) celeriac
  • 2 medium carrots
  • 0.5 medium red onion
  • 120 ml mayonnaise
  • 60 ml Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 1 tsp honey
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp, chopped fresh parsley

Directions

Step 1

Peel the celeriac using a sharp knife, removing all tough outer skin, then shred it using a box grater or food processor with a grating attachment.

Step 2

Peel and grate the carrots. Thinly slice the red onion into very fine strips.

Step 3

In a large mixing bowl, combine the grated celeriac, grated carrots, and sliced red onion.

In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, apple cider vinegar, honey, salt, and black pepper to form a smooth dressing.
