  • 1 large (about 500g) celeriac (celery root)
  • 2 medium pear (ripe but firm)

  • 2 tablespoons olive oil
  • 4 cups vegetable stock
  • 0.5 cup heavy cream (optional)
  • 4 sprigs fresh thyme
  • 1 teaspoon (to taste) salt
  • 0.5 teaspoon (to taste) black pepper (freshly ground)
  • 1 teaspoon lemon juice
  • 1 serving bread or croutons (optional, for serving)

Directions

Step 1

Peel the celeriac, pears, and onion. Chop the celeriac into small cubes (about 1-inch), the pears into rough chunks, and dice the onion.

Step 2

Mince the garlic cloves and set aside.

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.

Add the celeriac cubes to the pot and toss to coat in the onion and garlic mixture. Cook for 5 minutes, stirring occasionally.
