Peel the celeriac, pears, and onion. Chop the celeriac into small cubes (about 1-inch), the pears into rough chunks, and dice the onion.
Mince the garlic cloves and set aside.
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and cook for 3-4 minutes until softened and translucent.
Stir in the minced garlic and cook for an additional 1 minute until fragrant, being careful not to burn it.
Add the celeriac cubes to the pot and toss to coat in the onion and garlic mixture. Cook for 5 minutes, stirring occasionally.
Pour in the vegetable stock and add the thyme sprigs. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.
After 20 minutes, add the chopped pears to the pot and continue cooking for another 10 minutes, or until the celeriac and pears are both soft and easily pierced with a fork.
Remove the thyme sprigs and discard them.
Using an immersion blender, puree the soup directly in the pot until smooth. If using a countertop blender, work in batches and blend until creamy, returning the soup to the pot afterward.
If desired, stir in the heavy cream for added richness. Adjust the consistency of the soup with a bit more stock or water if needed.
Season the soup with salt, black pepper, and the lemon juice to enhance the flavor.
