  • 6 pieces Bone-in, skin-on chicken thighs
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 whole Lemon, juiced and zested
  • 1 whole Orange, juiced and zested
  • 2 tablespoons Fresh thyme leaves
  • 1 tablespoon Fresh rosemary, chopped
  • 2 tablespoons Honey
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 cups Baby potatoes, halved
  • 1.5 cups Carrots, peeled and cut into chunks
  • 1 whole Red onion, quartered
  • 0.5 cup Chicken stock
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, lemon juice and zest, orange juice and zest, thyme leaves, rosemary, honey, salt, and black pepper to create the marinade.

Place the chicken thighs in a large resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring each piece is well-coated. Let it marinate in the refrigerator for at least 30 minutes, or up to 6 hours for maximum flavor.

Preheat your oven to 400°F (200°C).

In a large baking dish or sheet pan, combine the baby potatoes, carrots, and red onion. Drizzle with the remaining 1 tablespoon of olive oil, and season with a pinch of salt and pepper. Toss to coat.
