Ingredients

  • 4 pieces Chicken breasts
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 medium Avocado
  • 1 medium Tomato
  • 0.5 medium Red onion
  • 2 tablespoons Cilantro
  • 2 tablespoons Lime juice
  • 1 small Jalapeño (optional)
  • 0.25 teaspoon Salt (for salsa)
  • 0.25 teaspoon Pepper (for salsa)

Directions

Step 1

In a small bowl, mix together the cayenne pepper, smoked paprika, garlic powder, ground cumin, salt, and black pepper.

Step 2

Pat the chicken breasts dry with a paper towel. Rub both sides of each chicken breast with the spice mixture, ensuring they are evenly coated.

Step 3

Heat the olive oil in a large skillet or grill pan over medium heat. Once hot, add the chicken breasts and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for 5 minutes.

Step 4

While the chicken is cooking, prepare the avocado salsa. Dice the avocados, tomato, and red onion, and place them in a medium mixing bowl.

Step 5

If using jalapeño, finely dice it and add it to the bowl. Add the chopped cilantro, lime juice, salt, and pepper. Gently toss to combine.

Step 6

Serve the cayenne-rubbed chicken breasts topped with a generous scoop of avocado salsa. Garnish with additional cilantro leaves, if desired. Enjoy!
