Ingredients

  • 1 cup Fresh cherries (pitted and halved)
  • 2 tablespoons Unsweetened cocoa powder
  • 2 tablespoons Brown sugar
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic (minced)
  • 0.5 teaspoons Cayenne pepper
  • 0.5 cups Water
  • 1 teaspoon Extra virgin olive oil
  • 0.25 teaspoons Sea salt
  • 0.25 teaspoons Black pepper (freshly ground)

Directions

Step 1

Heat the olive oil in a medium saucepan over medium heat.

Step 2

Add the minced garlic to the saucepan and sauté for 1 minute, until fragrant.

Step 3

Stir in the pitted cherries, brown sugar, and cayenne pepper. Cook for 3–4 minutes until the cherries start to soften and release their juices.

Step 4

Add the cocoa powder, apple cider vinegar, Worcestershire sauce, soy sauce, Dijon mustard, and water to the saucepan, stirring well to combine.

Step 5

Bring the mixture to a simmer and reduce the heat to low. Let it cook for 15–20 minutes, stirring occasionally, until the sauce thickens and the cherries break down completely.

Step 6

Remove the saucepan from the heat and allow the mixture to cool slightly.

Step 7

Use an immersion blender (or transfer the mixture to a countertop blender) to puree the sauce until smooth.

Step 8

Taste and adjust seasoning with sea salt and black pepper as needed.

Step 9

If the sauce is too thick, add a splash of water to achieve the desired consistency.

Step 10

Allow the sauce to cool completely before serving. Store in an airtight container in the refrigerator for up to 1 week.
