Directions

Step 1

Wash the zucchini thoroughly and pat them dry. Trim the ends and grate the zucchini using the large holes of a box grater. Set the grated zucchini aside in a colander and sprinkle with a pinch of salt to extract moisture. Allow it to sit for 10 minutes.

Step 2

Meanwhile, finely chop the onion and mince the garlic. Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat.
