Ingredients

  • 200 grams Unsalted butter
  • 1 small Shallots
  • 60 ml Dry white wine
  • 60 ml Heavy cream
  • 1 tablespoon Lemon juice
  • 50 grams Caviar
  • 1 pinch Salt
  • 1 pinch Ground white pepper

Directions

Step 1

Finely mince the shallot and set it aside.

Step 2

In a medium saucepan over low heat, melt 50 grams of unsalted butter. Add the minced shallots and sauté until translucent, about 2-3 minutes.

Step 3

Pour in the white wine and let it simmer for 3-4 minutes until reduced by half.

Step 4

Add the heavy cream to the saucepan, stirring gently, and bring to a very light simmer. Cook for about 2 minutes.

Step 5

Reduce the heat to low. Gradually whisk in the remaining 150 grams of unsalted butter, a piece at a time, until fully incorporated and the sauce is smooth and velvety.

Step 6

Stir in the lemon juice, a pinch of salt, and ground white pepper to taste.

Step 7

Remove the saucepan from heat and allow it to cool slightly for 1-2 minutes.

Carefully fold in the caviar using a spoon, making sure not to break the delicate eggs.
