Ingredients

  • 12 oz Cavatappi pasta
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 4 oz Prosciutto, thinly sliced and chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper, freshly ground
  • 2 tbsp Fresh parsley, chopped
  • 0.5 cup Pasta cooking water

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cavatappi pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water before draining.

Step 2

In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant.

Lower the heat to medium-low and stir in the heavy cream. Let it simmer gently for about 3-4 minutes until it slightly thickens.

Stir in the grated Parmesan cheese until it melts and the sauce becomes smooth. Add the reserved pasta cooking water a little at a time to achieve your desired sauce consistency.
