Ingredients

  • 1 head Cauliflower
  • 4 tablespoons Unsalted butter
  • 2 teaspoons Dijon mustard
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest
  • 2 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 1 tablespoon Olive oil (optional, for roasting)

Directions

Step 1

Preheat your oven to 425°F (220°C) if you prefer to roast the cauliflower. Alternatively, you can steam it.

Step 2

Cut the cauliflower into bite-sized florets and rinse them under cold water.

Step 3

If roasting, toss the cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 20 minutes, flipping halfway through, until golden and tender. If steaming, cook the florets in a steamer basket over boiling water for 5-7 minutes until fork-tender.

Step 4

While the cauliflower cooks, melt the butter in a small saucepan over medium heat.

Step 5

Add minced garlic to the melted butter and sauté for 1-2 minutes until fragrant but not browned.

Step 6

Remove from heat and whisk in Dijon mustard, lemon juice, lemon zest, salt, and black pepper until the mixture is smooth and emulsified.

Step 7

Once the cauliflower is cooked, transfer it to a serving dish and drizzle the mustard lemon butter sauce over the top.

Step 8

Garnish with fresh chopped parsley for a burst of color and additional flavor.

Step 9

Serve immediately as a side dish to complement your main course.
