Ingredients

  • 1 head cauliflower
  • 300 grams button mushrooms
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash the cauliflower thoroughly and cut it into bite-sized florets.

Step 2

Wipe the mushrooms with a damp cloth to clean them. Slice them into thin pieces.

Step 3

Peel the onion, cut it in half, and slice it into thin half-moons.

Step 4

Mince the garlic cloves finely.

Step 5

Heat the olive oil and butter in a large skillet over medium heat.

Step 6

Once the butter is melted, add the sliced onions and a pinch of salt. Sauté for 4-5 minutes until softened and lightly golden.

Step 7

Add the minced garlic and mushrooms to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become tender.

Step 8

Stir in the cauliflower florets, thyme, salt, and black pepper. Mix well to coat the cauliflower with the flavors.

Step 9

Cover the skillet with a lid and lower the heat to medium-low. Let the cauliflower cook for 10-12 minutes, stirring occasionally, until it is tender but still slightly firm (al dente).

Step 10

Remove the lid and increase the heat to medium. Cook for 2-3 more minutes to evaporate any excess liquid.

Step 11

Garnish with freshly chopped parsley and adjust seasoning if needed.

Step 12

Serve immediately as a side dish or a light vegetarian main course.
