Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 0.5 teaspoons Ground turmeric
  • 1 teaspoon Ground coriander
  • 3 cloves Garlic
  • 1 inch piece Fresh ginger
  • 2 small Green chilies
  • 1 teaspoon Salt
  • 2 tablespoons Fresh cilantro
  • 0.25 cups Water

Directions

Step 1

Cut the cauliflower into bite-sized florets and rinse thoroughly. Pat dry.

Step 2

Peel and mince the garlic and ginger. Slice the green chilies thinly.

Step 3

Heat the vegetable oil in a large skillet or wok over medium heat.

Step 4

Add the mustard seeds, cumin seeds, and fennel seeds. Stir for 30 seconds or until the seeds begin to pop and release their aroma.

Step 5

Add the minced garlic, ginger, and green chilies to the skillet. Cook for 1 minute, stirring constantly, until fragrant.

Step 6

Stir in the ground turmeric and ground coriander. Mix well to coat the aromatics in the spices.

Step 7

Add the cauliflower florets to the skillet and stir to coat the cauliflower evenly with the spice mixture.

Step 8

Sprinkle salt over the cauliflower and pour in the water. Stir, then cover the skillet with a lid. Reduce the heat to low and let it cook for about 10 minutes, stirring occasionally.

Step 9

Check if the cauliflower is tender by piercing it with a fork. If needed, cook for an additional 2-3 minutes, uncovered, until the water evaporates and the cauliflower begins to brown slightly.

Step 10

Garnish with fresh cilantro before serving. Serve hot as a side dish or with rice or flatbread for a complete meal.
