Ingredients

  • 1 head Cauliflower (medium head)
  • 4 pieces Roma tomatoes
  • 1 piece Yellow onion (large)
  • 2 cups Cheddar cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with a light coat of olive oil or cooking spray.

Step 2

Cut the cauliflower into florets and blanch them in boiling water for 5 minutes. Drain and set aside.

Step 3

Slice the tomatoes and onion into thin rounds. Set aside.

Heat the olive oil in a skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
