Ingredients

  • 1 large head Cauliflower
  • 4 tablespoons Olive oil
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 0.5 cup Kalamata olives
  • 0.5 cup Green olives
  • 0.25 cup Fresh parsley
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 1 tablespoon Capers
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

Step 2

Remove the leaves from the cauliflower and trim the stem. Cut the cauliflower into 1-inch-thick slices, keeping the core intact to hold the 'steaks' together.

Step 3

Brush both sides of the cauliflower steaks with 2 tablespoons of olive oil. Sprinkle with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 4

Place the cauliflower steaks on the prepared baking sheet in a single layer. Roast in the oven for 20–25 minutes, flipping halfway through, until golden brown and tender.
