  • 1 head Cauliflower
  • 1 medium Onion
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 4 cups Vegetable broth
  • 0.5 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 slices Bread
  • 1 tablespoon Butter
  • 1 tablespoon Fresh parsley (optional)

Directions

Step 1

Wash and chop the cauliflower into small florets.

Step 2

Peel and dice the onion and garlic.

Step 3

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the onion and garlic, and sauté for 5 minutes until softened.

Add the cauliflower florets to the pot and cook for another 5 minutes, stirring occasionally.

Pour the vegetable broth into the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes, or until the cauliflower is very tender.
