Ingredients

  • 1 large Cauliflower head
  • 2 tablespoons Butter
  • 1 medium Yellow onion

  • 4 cups Chicken or vegetable stock
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground white pepper
  • 0.25 teaspoon Nutmeg (optional)
  • 2 tablespoons Fresh parsley or chives (for garnish)

Directions

Step 1

Cut the cauliflower into florets and discard the hard core. Rinse the florets under cold water and set them aside.

Step 2

Peel and finely chop the yellow onion and garlic.

Step 3

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent, about 5 minutes.

Add the cauliflower florets to the pot and stir well to coat them in the butter.
