Ingredients

  • 1 whole Cauliflower head
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Plain Greek yogurt
  • 1 minced Garlic clove
  • 1 tablespoon Lemon juice
  • 1 whole Carrot
  • 2 whole Black olives
  • 2 tablespoons Chives or parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare the cauliflower by removing the leaves and trimming the stem so it can stand upright on a baking sheet.

Step 3

Brush the entire cauliflower head with olive oil and season with salt and black pepper.

Step 4

Place the cauliflower on a baking sheet lined with parchment paper and roast in the oven for 25-30 minutes, or until tender and lightly golden on the edges.

While the cauliflower roasts, make the yogurt sauce by mixing the Greek yogurt, minced garlic, and lemon juice in a small bowl. Set aside.

Peel the carrot and cut it into four thin strips to resemble legs. Slice a small oval to use as the sheep's snout.

Cut small pieces from the black olives to shape the sheep’s eyes, or use them whole for simplicity.
