Ingredients

  • 1 large head cauliflower
  • 4 slices rye bread
  • 3 large eggs
  • 1.5 cups milk
  • 2 cups cheddar cheese, shredded
  • 1 medium yellow onion, diced
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with butter or olive oil and set aside.

Step 2

Cut the cauliflower into small florets. Steam the florets in a pot with a steamer basket for about 5-7 minutes, or until tender but not mushy. Drain and set aside.

In a medium skillet over medium heat, warm the olive oil. Add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1 minute. Remove from heat.
