Ingredients

  • 1 medium head Cauliflower
  • 2 large Eggs
  • 0.5 cup Breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 2 tablespoons Parsley, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Cut the cauliflower into florets and rinse them thoroughly under cold water.

Bring a pot of salted water to a boil, then add the cauliflower florets. Cook for 8-10 minutes or until tender. Drain and let cool slightly.

Place the cooked cauliflower in a large mixing bowl and mash it with a fork or potato masher until it resembles a rough paste.
