Ingredients

  • 1 large head Cauliflower florets
  • 1 medium, finely chopped Onion
  • 4 large Eggs
  • 0.5 cup Matzo meal (or almond flour for gluten-free)
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 2 tablespoons, chopped Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish or similar-sized casserole dish.

Step 2

Bring a large pot of water to a boil. Add the cauliflower florets and cook for 8-10 minutes, or until very tender. Drain well and set aside to cool slightly.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-7 minutes, or until softened and lightly golden. Remove from heat.

Step 4

Transfer the cooked cauliflower to a large mixing bowl and mash it using a potato masher or fork until mostly smooth (a few small chunks for texture are okay).

Step 5

Add the cooked onions, eggs, matzo meal (or almond flour), salt, ground black pepper, and garlic powder to the mashed cauliflower. Mix thoroughly until evenly combined.

Step 6

Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.

Step 7

Bake in the preheated oven for 40-45 minutes, or until the kugel is golden brown on top and set in the center.

Step 8

Remove from the oven and let cool slightly before slicing into squares or wedges. Garnish with freshly chopped parsley, if desired, before serving.
