  • 1 medium head Cauliflower
  • 1 cup (packed) Fresh cilantro (coriander leaves)
  • 0.5 cup (packed) Fresh mint leaves
  • 2 medium Green chilies
  • 4 large Garlic cloves
  • 1 inch piece Ginger
  • 3 tablespoons Yogurt (plain, unsweetened)
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 3 tablespoons Oil (vegetable or coconut)
  • 1 teaspoon, or to taste Salt
  • 2 tablespoons Water
  • 1 tablespoon Lemon juice
  • 1 medium, finely chopped Onion

Directions

Step 1

Cut the cauliflower into medium-sized florets. Wash thoroughly and set aside.

Step 2

In a blender, combine cilantro, mint leaves, green chilies, garlic, ginger, yogurt, and 2 tablespoons of water. Blend to a smooth paste and set aside. This is your green masala paste.

Step 3

Heat 2 tablespoons of oil in a large skillet or wok over medium heat. Add the cauliflower florets and sauté for 7-8 minutes until they are lightly browned and partially cooked. Remove and set aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of oil. Add the cumin seeds and let them sizzle for 30 seconds. Stir in the finely chopped onion and sauté until golden brown, about 5 minutes.
