Ingredients

  • 1 large head cauliflower
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 0.5 cup heavy cream
  • 1.5 cups grated Gruyère cheese
  • 0.5 cup grated Parmesan cheese
  • 0.25 teaspoon ground nutmeg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup panko breadcrumbs

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Break the cauliflower into large florets and steam or boil until just tender, about 5-7 minutes. Drain well and set aside.

In a medium saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for about 2 minutes until the flour is lightly golden.

Gradually whisk in the milk and the heavy cream. Continue to whisk until the mixture is smooth and comes to a gentle boil and thickens, about 5 minutes.
