Ingredients

  • 500 grams Cauliflower florets
  • 120 grams All-purpose flour or gluten-free flour
  • 1 large Egg
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 6 leaves Fresh sage leaves
  • 50 grams Grated Parmesan cheese
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by steaming the cauliflower florets until very tender, about 10 minutes. Drain them thoroughly and let cool slightly.

Step 2

Once cool, transfer the cauliflower to a clean kitchen towel and squeeze out as much water as possible.

Step 3

Place the drained cauliflower in a food processor and pulse until smooth and creamy.

Step 4

Transfer the cauliflower puree to a large mixing bowl, add flour, egg, and salt. Mix until the dough is well combined and slightly sticky.

Step 5

Lightly flour a clean surface and divide the dough into four equal portions.

Step 6

Roll each portion into a long rope, about 1/2-inch thick, and cut into 1-inch pieces.

Step 7

Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Step 8

In a large skillet over medium heat, add the olive oil and butter. Once the butter has melted and is starting to foam, add the sage leaves and cook until fragrant, about 1 minute.

Step 9

Add the cooked gnocchi to the skillet and sauté until they are golden brown on each side, about 2-3 minutes.

Step 10

Season with black pepper and sprinkle with grated Parmesan cheese before serving. Enjoy your homemade cauliflower gnocchi!
