Ingredients

  • 500 grams cauliflower florets
  • 100 grams all-purpose flour
  • 2 large eggs
  • 2 cloves garlic cloves, minced
  • 2 tablespoons parsley, chopped
  • 2 green onions, finely chopped
  • 1 teaspoon paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 100 milliliters vegetable oil (for frying)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 8-10 minutes until tender. Drain and let cool slightly.

Step 2

Using a fork or potato masher, mash the cauliflower florets into small, crumbly pieces. You don't need to make it completely smooth—some texture is ideal.

Step 3

In a large mixing bowl, combine the mashed cauliflower, all-purpose flour, eggs, minced garlic, chopped parsley, green onions, paprika, cumin, salt, and black pepper. Mix until well combined into a thick batter.

Step 4

Heat the vegetable oil in a large skillet over medium heat. To check if the oil is ready, drop a small piece of batter into the oil—it should sizzle gently.

Step 5

Using a spoon or small scoop, drop heaping tablespoons of the batter into the hot oil. Flatten them slightly with the back of the spoon to form fritters.

Step 6

Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to avoid burning.

Step 7

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 8

Serve the fritters warm with your favorite dipping sauce or a squeeze of lemon juice for added brightness.
