Ingredients

  • 12 oz Pasta (penne or rigatoni)
  • 1 medium head Cauliflower florets
  • 3 tbsp Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 small Red onion, thinly sliced
  • 1 cup Crumbled feta cheese
  • 1 cup Mozzarella cheese, shredded
  • 1 tsp Dried oregano
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

Preheat your oven to 400°F (200°C) and grease a large baking dish.

Step 2

Bring a large pot of salted water to a boil and cook the pasta until al dente according to the package instructions. Drain and set aside.

While the pasta cooks, cut the cauliflower into small florets and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt, pepper, paprika, and oregano. Toss to coat evenly.
