Ingredients

  • 1 whole (medium, cut into florets) Cauliflower
  • 2 whole (trimmed, cleaned, and finely sliced) Leek
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 500 ml Whole milk
  • 150 grams (grated) Sharp cheddar cheese
  • 50 grams (grated) Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon (freshly grated) Nutmeg
  • 50 grams Breadcrumbs
  • 1 teaspoon (to taste) Salt
  • 1 teaspoon (to taste) Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Fill a large pot with water, add a pinch of salt, and bring to a boil. Blanch the cauliflower florets in the boiling water for 4-5 minutes until just tender, then drain and set aside.

Step 3

Heat 1 tablespoon of the butter and the olive oil in a large frying pan over medium heat. Add the sliced leeks and cook for 8-10 minutes, stirring occasionally, until softened and slightly caramelized. Set aside.

In a medium saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to create a roux.
