Ingredients

  • 1 medium head cauliflower
  • 3 large carrots
  • 3 stalks green onions
  • 2 tbsp parsley

Directions

Step 1

Remove the leaves and stem from the cauliflower. Break it into small florets and rinse well under running water.

Step 2

Using a sharp knife or a food processor, chop the cauliflower florets into fine, rice-sized pieces. Alternatively, you can grate the florets using a box grater.

Step 3

Peel and shred the carrots using a box grater or food processor.

Step 4

Thinly slice the green onions and finely chop the parsley.

In a large mixing bowl, combine the chopped cauliflower, shredded carrots, sliced green onions, and parsley. Toss gently to mix.
