  • 1 head cauliflower florets
  • 2 tablespoons olive oil
  • 6 slices bacon
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 6 ounces Brie cheese, rind removed and cubed
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons chopped fresh chives (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Spread the cauliflower florets on the baking sheet. Drizzle with 2 tablespoons of olive oil and toss to coat. Roast in the oven for 25 minutes, flipping halfway through, until golden and tender.

While the cauliflower is roasting, cook the bacon in a large pot over medium heat until crispy, about 6-8 minutes. Remove the bacon and place on a paper towel-lined plate to drain. Crumble once cooled.
