Ingredients

  • 1 head cauliflower
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium, diced yellow onion
  • 3 cloves, minced garlic
  • 2 stalks, diced celery stalks
  • 1 medium, peeled and diced potato
  • 4 cups chicken or vegetable broth
  • 0.5 cup heavy cream
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 2 tablespoons, chopped (optional, for garnish) fresh chives

Directions

Step 1

Trim the leaves and core from the cauliflower, then cut it into small florets. Set aside.

Step 2

Melt the butter and olive oil in a large pot over medium heat.

Step 3

Add the diced onion, minced garlic, and diced celery. Sauté for 5-7 minutes, or until the vegetables are soft and fragrant.

Add the diced potato and cauliflower florets to the pot. Stir to coat them with the butter and oil mixture.

Pour in the chicken or vegetable broth, and add the fresh thyme sprigs and bay leaf. Bring the mixture to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the cauliflower and potato are tender.
