Ingredients

  • 1 head cauliflower
  • 12 oz medium shell pasta
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2.5 cups whole milk
  • 2 cups white cheddar cheese, shredded
  • 2 tbsp fresh dill, chopped
  • 1 tsp garlic powder
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 8 cups water

Directions

Step 1

Fill a large pot with 8 cups of water and bring to a boil. While waiting for the water to boil, trim the cauliflower into small bite-sized florets.

Step 2

Once the water is boiling, add a teaspoon of salt, followed by the shell pasta and cauliflower florets. Cook for 8-10 minutes, or until the pasta is al dente and the cauliflower is just tender.

Drain the pasta and cauliflower, then set them aside in the pot or a large serving bowl.

In the same pot (or a medium saucepan), melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.
